Sausage and Peppers

Italian sausages4 large

bell peppers3 large

fresh herboregano, thyme or basil would be good

hoagie rolls4

oil

onion1 large

pepper
-
polenta
-
salt
-
sugar1 spoonful

vinegar

- wide pan

1Heat a little oil in a wide pan over medium heat.oil

2Drop in Italian sausages .Italian sausages: 4 large

3Rotate them periodically and cook them until they're brown all over and feel mostly cooked through (i.e. only barely squishy in the middle when you poke them).

4If the fond on the bottom of the pan shows any signs of burning, turn the heat down.

5Seed and slice bell peppers into big pieces.bell peppers: 3 large

6Peel and slice onion into wide wedges.onion: 1 large

7When the sausages are almost cooked through, take the pan off the heat.

8Remove the sausages to a cutting board.

9Slice the sausages in half lengthwise or into thick rounds.

10Return the pan to the heat.

11Put all the sausage back in, cut-side down.

12Move the sausage around the pan to make sure each piece gets evenly browned on the cut side.

13When they're done, take them out to a plate.

14Put in the sliced bell peppers and onion wedges.

15Turn the heat up to medium-high.

16Cook the vegetables, stirring constantly and scraping the bottom of the pan to deglaze.

17When the vegetables are 2/3 as tender as you want, pour in vinegar to taste (I use about 1/4 cup, 60mL) and sugar .vinegar, sugar: 1 spoonful

18Stir everything up.

19Taste a pepper and add salt and pepper to taste, and maybe more vinegar and/or sugar.salt, pepper

20Return the sausage to the pan and toss to get everything coated and hot.

21Turn the heat off.

22Tear in some fresh herb and stir to combine.fresh herb: oregano, thyme or basil would be good

23Eat it just like that, or toast hoagie rolls (optional) under the broiler and have sandwiches, or coat each plate with polenta and serve the meat and vegetables on top.hoagie rolls: 4, polenta
